Ember is a deep, fruit-forward sour aged for six months on whole blackcurrants and beetroot. The blackcurrants bring a bright, punchy tartness and subtle tannins, while the beetroot adds depth and a gentle earthy quality. Bold and expressive, yet light and easy-drinking, Ember balances moderate acidity with delicious dark fruit character.
