DARK SOUR WITH RASPBERRIES
& CHERRIES
Enigma is a sour that uses roasted and crystal malts in the mash for a darker colour and notes of mocha, burnt caramel, and raisin. Post fermentation we aged Enigma for three months on fresh raspberries and juicy cherries to provide a zingy, fruity contrast to the chocolatey flavours from the malt.

GINGER GOSE
Superstar is an easy drinking gose that has been infused with ginger. This beer has citrussy esters from yeast, spiciness from coriander seeds, and salty notes from fleur de sel. The addition of ginger adds a warming, earthy character that’s perfect for the festive season. Superstar is a personal favourite at Dolphin HQ – we hope you enjoy it too.

GINGER GOSE WITH PINK PEPPERCORNS AND PEARS
Starlet is an easy drinking gose that has been infused with root ginger and pink peppercorns and
conditioned on farm-pressed pear juice from Kent. The pink peppercorns add extra spiciness to the warming, earthy character from the ginger, whilst the pear juice adds a restrained fruitier note and keeps the beer beautifully light and easy drinking.

RIDDLER
DARK SOUR WITH PLUMS, FIGS & CHERRIES
Riddler is a sour that uses roasted and crystal malts in the mash for a darker colour and notes of mocha, burnt caramel and raisin. Post fermentation we aged Riddler for three months on fruit selected to complement the character of the base beer– plums for tanginess, cherries for tartness, and roasted figs (kindly provided by local beer aficionado, Tim Lloyd) for a touch of figgy sweetness.

SILHOUETTE
AGED SOUR W/ BLACKCURRANTS
& MULLING SPICES
Silhouette uses beer aged for 20 months – 16 months in tank, and then 4 months on plump juicy blackcurrants, a mixture of second-use raspberries with pinot noir skins, and a blend of mulling spices (cinnamon sticks, star anise and ginger). The result is a well-structured beer with saturated berry flavour, a pleasing dryness, and subtle spicing evocative of a comforting mug of gluhwein.

APPLE & RHUBARB SOUR
Archer is an apple and rhubarb sour fermented on a single-variety apple juice from the amazing Townsend farm in Herefordshire. The Jonagold apples used in the juice add a sweet, appley crispness to this beer – a perfect match for the natural tartness from the rhubarb juice.

OUTLAW
BRETT PALE WITH PEACH
Outlaw has been fermented with a Brettanomyces yeast culture – producing an array of tropical fruit flavours – alongside our lactobacillus culture that adds a subtle sourness. We’ve given this beer a peachy twist by adding peach puree, in addition to Strata, Vic Secret, El Dorado, and Bru 1 hops – to bump up the fruitiness.

ELDERFLOWER SOUR W/ WHITE GRAPES & GOOSEBERRIES
Soprano is an elderflower sour with a floral freshness that reminds us of late-Spring country walks. We’ve used bags of fresh elderflowers picked locally in the morning sunshine at Sulham woods. With additions of freshly squeezed white grape juice for a touch of sweetness, and zingy gooseberries for an extra note of sharpness.

SAISON AGED ON CHARDONNAY SKINS W/GOOSEBERRIES & PEAR JUICE
Luminaire has a subtle white wine character due to ageing on spent chardonnay skins, kindly provided by Freedom of the Press winery based in the Cotswolds. Clean and crisp in both appearance and flavour, this beer has restrained yeast expression, delicate earthy tones and notes of both fresh gooseberry and ripe orchard fruits.

BRETT AGED SOUR W/ PINOT SKINS & RASPBERRIES
PROTÉGÉ is earthy, dry and packed full of grape tannins having conditioned on spent pinot noir skins from Freedom of the Press – a brilliant small batch winery based in the Cotswolds. We added raspberries alongside the grape skins to help provide balance and a more rounded fruit character. The resulting beer is a deep crimson colour with flavours of summer berries and sangria.

SOUR AGED ON CHARDONNAY SKINS W/ APRICOTS & ORANGES
Solitaire has a subtle white wine character due to ageing on spent chardonnay skins, kindly provided by Freedom of the Press winery based in the Cotswolds. Pleasing tannins and delicate earthy tones are balanced against fruitier notes from the inclusion of British apricots, and a vibrant citrussy dimension from the addition of fresh Valencia orange peel.

BRETTED SAISON WITH REDCURRANTS & RED GOOSEBERRIES
Fallow is a saison that we’ve aged for six months on redcurrants, red gooseberries and a farmhouse-style Brettanomyces yeast strain. It’s the first of two releases using hand-picked fruit gathered in the summer sunshine from fields previously operated as a pick your own farm. It has a lovely lightness, some subtle woodiness, and pleasing notes of red apple and fresh lemon juice.

RASPBERRY SOUR
Juggler is all about encapsulating the wondrous flavours of fresh raspberries. Back for the fourth year running, our flagship sour is yet again packed full of juicy Herefordshire grown raspberries. Super juicy and tart, with that unmistakable fresh raspberry zing!

BRETT AGED SOUR W/ RASPBERRIES & BLACKBERRIES
Enchanter, a brett aged sour with Herefordshire raspberries and locally foraged blackberries. Aged for twelve months plus an additional four months on the berries. Enchanter is a well structired beeer with a beautiful erathy depth and complexity, bursting with flavours of dark bramble fruits.

BERLINER WEISSE W/ELDERBERRIES AND MEDLARS
Elder is a quaffable Berliner Weisse that uses a high percentage of wheat in the mash, German hops, and a German ale yeast during fermentation. It’s lightly soured, easy drinking, with some low-intensity Brett character. We added modest fruit additions of tangy foraged elderberries and medieval medlars - grown in the garden of one our farmers’ market customers and bringing flavours of stewed apples.

BLACKBERRY & LEMON GOSE
Twister is packed full of foraged juicy blackberries kindly donated by Delphic Brewing and their bountiful annual blackberry-picking competition. Full of the flavours of late summer hedgerows; Twister is sharp, tart, jammy and earthy - with additions of fresh lemon juice and fleur de sel creating balance against the tanginess of the fruit.

PINEAPPLE GOSE
Rocketeer is a refreshing, easy drinking gose with delicate tropical flavours from the addition of fresh juicy pineapple and from the yeast strain we selected. This beer is dry, with a pleasing sourness, and a savoury character from the addition of fleur de sel and coriander seeds.

MELON, CUCUMBER & PEAR GOSE
Laureate is a delicate sour that’s super light and refreshing. This year we’ve added Kentish pear juice alongside our usual addition of honeydew melon for an extra hit of juiciness. The cucumber adds a cleansing character that works wonderfully with salty notes from fleur de sel and savoury notes from coriander seeds.

RIDDLER | DARK SOUR
5.4% Riddler is a sour that uses roasted and crystal malts in the mash for a darker colour and flavours of coffee, chocolate, caramel, and raisin. Post fermentation we aged Riddler for 3 months on locally grown roasted figs (kindly provided by local beer aficionado, Tim Lloyd), as well as plums and cherries from Roughway Farm in Kent.
MYSTIC | SOUR
5% Mystic is an enchanting deep red colour having been conditioned on festive cranberries and fragrant hibiscus. The cranberries add a lovely bright tartness, whilst the dried hibiscus petals bring a deep red fruit character and a touch of earthy bitterness.
COMPOSER | SOUR/SAISON BLEND
6% Brewed for Salford Beer Festival 2023. Composer is a blend of our base sour with a rye saison. By blending we’ve deepened the flavour of the resulting beer - producing a dryer finish and mellowing the overall sourness. After blending, we aged Composer on organic blackcurrants from Herefordshire – filling this beer with an earthy, jammy character, and turning it a wonderful shade of purple.

5.5% Soprano is an elderflower and white grape sour with a floral freshness that reminds us of late-Spring country walks. We’ve used bags of fresh elderflowers picked locally in the morning sunshine and freshly squeezed white grape juice for a flavour combo that works so well together. Grape skins add a pleasing tannic quality, whilst a small amount of gooseberries add a note of tartness.

PROTEGE | BRETT AGED SOUR
6.3% PROTÉGÉ is a sour that’s been aged on Brettanomyces yeast strains, spent pinot noir skins from Freedom of the Press winery in the Cotswolds, and raspberries. It is packed full of grape tannins - with minimal carbonation to emphasise the wine-like character, and an acetic note from the wine yeasts. We find it dry, earthy, with notes of summer fruits and sangria
MIRABELLE | BRETT AGED SOUR
6.5% Mirabelle is a sour aged on a Brett yeast culture with mirabelle plums and rhubarb. Clear and golden in appearance with a honey character from the plums and notes of stewed rhubarb and custard
HYBRID | BRETT AGED SOUR
6.3% Hybrid is a sour that’s been aged on Brettanomyces yeast strains and hybrid berries – picked at West Green Fruit Farm in Hampshire. It's a delicious mix of loganberries, boysenberries, tumbleberries, silvanberries, and tayberries! It’s light, with a rounded berry character and some pleasing Bretty notes on the finish.
We find it tart, with hedgerow fruit flavours and a slight brambley herbaceous character
TREBLE | BRETT AGED SOUR
6.5% Treble is a sour beer aged on a blend of Brettanomyces yeast strains, with damsons, damson stones, and foraged elderberries and sloes (picked on countryside walks). We get woody, smokey and leathery notes complementing a deep damson jam character and a pleasing touch of bitterness from the sloes.
ALTO | SOUR
5.5% Alto – our red grape sour – is back for 2023! Additions of red grapes, blackcurrants, and blueberries create a wine-like character to this beer. Packed full of fruitiness, Alto has a deep red hue and a drying, tannic finish from the addition of grape skins.
ROCKETEER | GOSE
4.8% Rocketeer is a refreshing, easy drinking gose with delicate tropical flavours from the use of fresh juicy pineapple, pineapple puree, and a fruity yeast strain. This beer is dry, with a pleasing sourness, and a salty/savoury character from the additions of Fleur De Sal and coriander seeds.
ARTIO | SOUR
4.8% Artio has a gentle sourness and a lovely apple character due to the addition of Jonagold juice from the orchards of Townsend Farm. We’ve loved using this apple juice as an accompaniment to other fruits in previous beers - we just had to let it shine on its own! Artio is light, delicate, crisp, and super sessionable! A perfect beer to enjoy in the Spring sunshine.
SOLOIST | SAISON
6% Soloist is a lightly phenolic Saison that has been dry hopped with Nelson Sauvin hops. This wonderful hop is known for its fruity, gooseberry, and wine like flavours – providing hoppy notes that marry perfectly with the dry and aromatic nature of this beer.

HIGH QUEEN | STOUT
10% High Queen is a super small batch festive special and the highest ABV beer we’ve ever brewed. Complex without being overcomplicated, this beer is packed full of roasted coffee flavour and aroma with beans supplied by the amazing Anonymous Coffee. Expect notes of chocolate, caramel and hazelnut with a strong espresso hit – definitely one to warm you up on a cold wintery night.
TROUPER | BRETT-AGED SOUR
7% In June 2021 we brewed a sour beer called Trouper – releasing half of it as Trouper v1 after 12 months of ageing. Trouper v2 now becomes the oldest beer we’ve ever released, having been aged for an additional 6 months to intensify the flavours. Aged on multiple Brettanomyces strains as well as multiple additions of cherries and apricots - Trouper v2 is mildly sour, with a leathery character, and flavours of dried fruit, sherry, and cherry cola.
COUNTESS | STOUT
7.4% Countess is a stout that has been conditioned on vanilla pods, cacao, and tonka beans. A decadent beer packed full of sweet vanilla, rich tonka and dark powdery chocolate. This year we’ve tweaked our recipe to elevate the prominence of vanilla - using Madagascan pods and increasing their contact time to extract more flavour.
RIDDLER | DARK SOUR
6.3% Typically we use a simple malt bill of pilsner and wheat malt in our sour beers, but we’ve switched things up inRiddler by adding an array of roasted and crystal malt too! This adds colour - turning the beer a dark shade of brown - but also adds notes of coffee, chocolate, caramel, and raisin. Riddler was conditioned on roasted figs, cherries, and plums - producing a mystifying mix of maltiness, sourness and fruit character.
MELODY MAKER | SOUR
5.2% Melody Maker has been brewed for the annual Independent Salford Beer Festival and is an autumnal medley of fantastic fruit flavours! In this beer we’ve used Herefordshire grown rhubarb, locally foraged blackberries, and Jonagold apple juice from the amazing Townsend farm. The fermented apple juice adds a refreshing crispness and notes of honey sweetness – a perfect accompaniment to the natural tartness from the rhubarb and blackberries.
TRICKSTER | SOUR
5% Trickster is our annual blackberry sour release packed full of plump, juicy, blackberries. This year we’ve used blackberries from West Green Fruit Farm, in addition to foraged berries picked by our lovely farmers’ market customers, and surplus foraged berries kindly donated by our friends at Delphic Brewing. Sharp, tart, earthy and sweet – full of the flavours of late summer hedgerows.
BUCCANEER | SOUR
5.7% Buccaneer is a refreshing sour full of fresh, juicy mango flavour due to the addition of ripe Caribbean mangos. A small addition of fresh pineapple helps to boost that totally tropical taste. A perfect accompaniment to the sunshine, or for evoking memories of long summery nights gone-by.
DREAMER | WIT
5% Dreamer is sessionable wit-style beer with floral notes from locally foraged elderflower and citrus notes from Valencia orange peel, in addition to Talus and Amarillo hop additions. We fermented using a Lithuanian Farmhouse yeast in order to achieve a small amount of black pepper and lemon pith character, in addition to a dry finish.

6.5% Trouper is the oldest beer we’ve released! Aged for one year on multiple Brettanomyces strains, cherries, and apricots, and refermented with a new mixed culture, farm-pressed cherry juice and apricot kernels. Trouper is mildly sour, with a leathery character, and flavours of dried fruit, sherry, and cherry cola

The addition of sea buckthorn berries adds a tangy, tangerine-like character, whilst modest dry hopping with Citra and Nelson Sauvin helps to accentuate their fruitiness. Delicate, yet aromatic – with wave upon wave of delicious Saison flavour.

QUEEN V | STOUT
5.5% We love Anonymous Coffee Co’s ‘No Name’ blend so much that we’ve used it again inQueen V. These beans are bursting full of chocolate, hazelnut, maple and caramel notes – flavours which work perfectly with our base stout recipe. Easy drinking, wonderfully smooth, and full of roasty coffee flavour and aroma.
ALTO | SOUR
6.2% Alto – our red grape sour – is back for 2022! Additions of red grapes, blackcurrants, and blueberries create a wine-like character to this beer. Whilst tannins, largely from the grape skins, provide dryness that’ll leave you eager for another sip.

4.8% Mysticis an enchanting deep red colour with layer upon layer of wonderous fruit character. This beer has everything; tartness and bitterness from cranberries, floral and fragrant notes from hibiscus, and a big kick of fresh lime to wash it all down with.
HARPER | SAISON
5.4% Harper is lightly phenolic citrussy Saison that has been amplified by dry hopping with Citra, Amarillo and Motueka hops – in addition to fresh lemon. This is a refreshingly crisp Saison, with a touch of acidity, and a rounded citrus character of lemons, limes and grapefruit.
KNIGHT | PORTER
6.5% Knight – our raspberry and chocolate porter – is back! This year’s version is more robust - with a higher abv, and increased dark chocolate character to help balance that fruity zing from the raspberries. A flavoursome porter that retains its drinkability – perfect for the festival season.

5.5% Trickster is our annual blackberry sour release that we’ve packed full of plump, juicy, blackberries. We used a sweeter variety compared to last year, providing increased balance against the sharper, more tart flavours - whilst still offering that wonderful earthy character reminiscent of the British hedgerow.
MEGASTAR | SOUR
4.8% Megastarwas brewed for The (Virtual) Independent Salford Beer Festival and inspired by two of our most popular previous releases; Juggler and Superstar. We co-pitched our in-house bacteria culture with our favourite yeast strain to create a base beer full of fruity esters and a wonderfully clean sourness. Additions of fresh raspberries and fleur de sal accentuate the sharpness, whilst ginger and coriander seeds provide a warming, earthy undertone.
TUMBLER | SOUR
5.6% Tumbler is a fruity sour that will twist and turn on your palate with delicate flavours of cherry and pear. We choose a delicious Herefordshire pear juice to use in this beer - adding a comforting crispness whilst mellowing the sour cherry puree. Conditioning on vanilla pods helps to give Tumbler a little lift; complimenting the fruit character and accentuating drinkability.
COUNTESS | STOUT
7.1% Countess is a stout that has been conditioned on Tahitian vanilla, tonka beans and cacao nibs. A decadent beer that’s packed full of sweet vanilla, rich tonka, and indulgent chocolate flavours. This year's Countess is slightly smother and a little boozier compared with the 2020 version - and we think all the better for it. A perfect accompaniment to a cold night.
QUEEN IV | STOUT
5% Queen IV showcases Anonymous Coffee Co’s ‘No Name’ blend, combining carefully selected beans from Brazil and El Salvador. These beans are bursting full of hazelnut, maple and caramel notes - flavours we've amplified through our malt selection. Wonderfully smooth and full of coffee aroma
COMPOSER | SOUR/SAISON BLEND
6.1% Composer is our first ever blended beer! We mixed our base sour with a rye saison - mellowing the overall sourness, and leaving a dryer, more complex finish. After blending, Composer was aged on freshly picked organic blackcurrants – filling this beer with beautiful earthy, jammy vibes and a wonderful shade of purple.
CONJUROR | SOUR
4.7% Conjurer is a refreshing sour conditioned on fresh peaches, fresh strawberries, and peach puree – with verdant yeast enhancing the stone fruit character of this beer. Summer has definitely arrived with this in your glass.
MARVEL | SOUR
4.8% This beer was brewed for The Grumpy Goat to celebrate Indie Beer Shop Day and to recognise the huge amount of expertise and personal service offered by indie beer shops throughout the country. Marvel is full of summer fruit flavour - balancing juicy nectarines, with tartness from plums, and a little sharpness from redcurrants. Cheers!

5.7% We’ve tripled the amount of mango we’ve used for this year's release of our tropical sour – Buccaneer. This version is packed full of fresh, juicy, ripe mango flavour that’ll fill your glass with sunshine.

5.7% Queen III is the third of a series of stouts showcasing great local coffee. this batch has been infused with coffee beans selected by anonymous coffee co. these lightly roasted brazilian coffee beans have flavours of milk chocolate, macadamia nuts and morello cherry. big coffee flavours, but light like cold brew.
DANCER | PORTER
4.6% Dancer is a quaffable porter infused with wonderfully ripe local figs from the garden of local morrisman and beer aficionado – Tim Lloyd. Before adding to the fermenter we roasted the figs in order to create caramelisation. Although subtle, the fig character provides fruity, fresh, and sweet notes – providing balance to the more robust, roasted character of the porter.

5.3% Artiste is a very small-batch Saison with spicy (phenolic) flavours from French Saison yeast that combine with gentle floral and earthy notes from hops. Rhubarb adds a fruit character to the body of this beer that provides balance to the dry, crisp finish.

5.4% Trickster is a kettle sour that showcases the jewel of the hedgerow - the blackberry. this beer has spent a month conditioning on blackberries, which add colour, tartness and earthiness to this otherwise lightly soured beer.

4.7% Dreamer is a super sessionable Belgian Wit with zesty pithiness from oranges, spiciness from coriander, and clove-like flavours from the phenolic Belgian yeast strain we used. Floral notes from conditioning on elderflowers add a freshness and a lightness to this beer. Cloudy, easy-drinking, and thirst-quenching.

4.7% Maestro is a kettle sour that harmonises fruitiness from hibiscus with a refreshing hit of citrus from lemons. lemons provide acidity to this lightly soured beer, while dried hibiscus flowers turn it a wonderful shade of pink.
