Ballerina is a beautifully delicate and easy-drinking sour that has been conditioned on freshly squeezed melon juice. We used a blend of galia, honeydew and watermelon to give a rounded, refreshing melon character, a touch of sweetness and a lovely lightness. A moderate dry-hop of Nelson Sauvin provides gentle hop character and some zesty citrus and gooseberry notes.
